My Day Off

I had a very productive day today . . . and yet, I still lazed around a bit reading blogs doing nothing. 😉

I ate a healthy breakfast.

Breakfast: Pumpkin pancakes with a side of bacon

I did a 40 minute workout that consisted of Jillian Michaels Quick Trouble Zones, along with her Boost Metabolism workout (thanks Comcast On Demand!). What an incredible workout! Both of those workouts are kind of short (20 minutes) and they give a great workout individually. But when you do both of them back to back, it makes for an even more intense workout session. Glad I worked out even though my shoulders were still sore from Saturday’s 30 day shred workout. 🙂

I ate a healthy lunch and healthy snacks.

Lunch: Boneless Buffalo Chicken Bites with green beans that I roasted with olive oil, salt, pepper, and some garlic powder. Yummy!

Snack#1: a handful of Trader Joe’s triple ginger gingersnaps

Snack#2: lots of grapes

I made a visit to Whole Foods for some pasta sauce. It was hard to get myself dressed and go out in 20 degree weather.

I played with my dog a bit. Cold weather and snow flurries do not bother her. She still wants to play her little heart out!

I did a little Christmas shopping online. I love online shopping! I was in my pajamas the whole time. 🙂 Now I have all of my Christmas shopping done, except for one gift. Success!

Even though my husband is out of town, I still cooked dinner for myself. It’s really tough cooking for one and I will probably have leftovers for a while. But it was worth it!

I made Stephanie’s Pizza Pot Pie and I believe that she got the idea from Jessica. This dish was very delicious. I did make a few changes. I omitted the mushrooms because, well, I hate them. I used American cheese instead of mozzarella (the latter gives me headaches) and I added some garlic powder, oregano, and red pepper to the pasta sauce mixture. Also, I made my own crust because I can’t have yeast right now. For my crust, I simply mixed 2 egg whites, half a cup of nonfat milk, a cup of flour, a tablespoon of olive oil, and a quarter teaspoon of salt.

The meal came out really well. The only complaint that I have is that the pasta mixture was a bit soupy. Maybe next time (and there will be a next time), I will add more meat or less sauce to help with that.

I paired this dish with some more roasted green beans

And a piece of 365 Mighty Organic Multigrain Bread.

Now I am relaxing in front of my space heater because I am too cheap stubborn to turn the heat on.

  2. I’m usually always cooking for one. I usually try and half the recipes or I make a full recipes and have leftovers for a week! Sometimes i’ll freeze some of the leftovers. I can say that it’s not that fun cooking for one.

  3. I give you tons of credit cooking such a delicious meal for one! If it weren’t for my hubby and kids I think I might eat oatmeal every night. Boring.

  4. Thanks so much for trying the recipe and glad you liked it! I would definitely up either the veggies and/or if you leave out the mushrooms next time to avoid any soupiness-it will do the trick to replace what moisture they would have absorbed 🙂

    If I’m cooking for just me I like to experiment with dishes that I know the man wouldn’t like (ie tofu, lentils, etc) since they are ingredients that I really enjoy but don’t get to use often!

  5. I end up using the Foreman grill. Boca burgers, pasta, and cheese quesadillas are my go tos.

  6. Yikes–cooking for one is so hard! I usually pop some white rice in the rice cooker and top it off with some spaghetti sauce and a couple overeasy eggs. It probably sounds weird, but it actually has a name (Arroz a la Cubana) and I ate it a good amount growing up. It’s my comfort food.
    Your roasted green beans looks mighty delicious. =)

  7. Even though I live with my family, I’m the only one that eats what I cook. I try to halve recipes as much as I can, so I don’t have too many leftovers. But as long as I love what I made, I don’t mind eating it every day for a week 🙂
